It's my birthday! My little guy was so cute this morning because he wanted to make sure that we would be having cake later today. Of course we will, but I'm still trying to decide what else to indulge in today. Whatever the main course ends up being, I definitely want some more of this lemon parmesan asparagus. Asparagus has always been one of my favorite side dishes. Even as a toddler I loved asparagus. I get a kick out of the stories my mom tells about waiters and waitresses being surprised about the things I would order as a 3 year old. One time in particular, the waitress double checked with my parents if in fact I would eat what I had ordered. My mom said that I would and so the waitress turned back to me and asked what I would like to drink. I turned my head to the side, smiled and said "champagne!" Don't worry - I wasn't drinking champagne as a baby, but I already knew what the good stuff was LOL.
Lemon Parmesan Asparagus
- 1 lb. fresh asparagus
- 1 Tbsp. butter
- 1/2 lemon
- Parmesan to taste
- Heat a pan over medium heat and add the butter.
- Saute the asparagus for roughly 5 minutes - add juice from the lemon at any time during sauteing.
- Remove the asparagus from the pan and transfer to a serving dish.
- Top with desired amount of shaved Parmesan cheese.
